Can a commercial freezer be used as a refrigerator? Sometimes, but only if the manufacturer provides a fridge mode or a qualified refrigeration technician confirms that a particular unit can operate safely at chilled-food temperatures. A standard freezer’s temperature dial is usually designed for freezing, so turning it to its warmest setting is not a reliable way to make a fridge.

Check the manufacturer’s instructions first

Some appliances are sold as convertible fridge-freezers. Their controls and operating instructions specify both modes. If your model has a documented fridge setting, follow the manufacturer’s instructions, including any steps for changing mode, loading the cabinet and allowing temperatures to stabilise.

If the manual lists only a freezer operating range, do not assume the unit is suitable for chilled food storage. The correct answer depends on the model, its controls, defrost system, airflow and the manufacturer’s specifications. Ask the supplier or a qualified technician before changing controls or wiring.

Why a temperature setting alone is not enough

A food business needs stable temperatures throughout the cabinet, not merely a warm number on a controller. Door openings, loading, ambient heat and the location of the sensor can all affect the temperature of the food. A modified unit may also handle condensation and defrost differently at a warmer setting. These are model-specific questions that need checking rather than assumptions about every freezer.

External temperature controllers are sometimes discussed as a way to switch a freezer off at a chosen set point. They do not, by themselves, establish that the cabinet is suitable for commercial refrigeration. A technician should review the electrical setup, operating cycle, defrost and temperature distribution before a business relies on such a configuration.

Food safety is the deciding test

Under Australian food safety rules, potentially hazardous food held cold generally needs to be kept at 5°C or colder, unless the business can demonstrate a safe alternative system. The Food Standards Australia New Zealand temperature-control guidance explains the requirement. A cabinet that cannot maintain the required food temperature during normal trading is not suitable for that use, whatever its display says.

Check the temperature with an independent, suitable thermometer and keep records in line with your food safety procedures. Test realistic conditions, including normal loading and door use. Do not use the cabinet for perishable stock until you have confidence that it consistently holds the required temperature.

Questions to ask before reusing a freezer

  • Does the model’s manual explicitly permit refrigerator operation?
  • What temperature range does the manufacturer specify for that mode?
  • Will the warranty and service support still apply?
  • Can the cabinet hold the required food temperature across all shelves during normal use?
  • How will defrost, condensation and drainage behave at the new setting?
  • What is the measured energy use compared with a purpose-built commercial refrigerator?

If any answer is uncertain, a purpose-built commercial refrigerator is often the simpler and more dependable choice. Avoid assuming that a conversion will save energy or money. Compare the cost of assessment and any modification with the cost, capacity, warranty and running costs of a suitable fridge.

Frequently asked questions

Can I just turn a commercial freezer up to fridge temperature?

Usually, the normal control range is intended for frozen storage. Check the model manual. If it has a manufacturer-approved fridge mode, use that mode exactly as instructed. Otherwise, seek a qualified assessment before using it for chilled food.

Does an external thermostat make a freezer safe as a fridge?

No single accessory can prove that. The whole system must be suitable for the new operating conditions and keep food at a safe temperature under realistic use. Ask a qualified technician to assess the unit and monitor the resulting temperatures.

What temperature should a commercial fridge hold?

Potentially hazardous food held cold generally needs to be at 5°C or colder under the Food Standards Code, unless a validated alternative applies. Choose an equipment set point that reliably achieves that food temperature, and monitor it with an independent thermometer.
